Haha, yes, I know Strawberry Moon was *last* month. But honestly, you could use any hot fruit to make it a little more seasonal. I just happened to have some strawberries still in my refrigerator that needed using, so they made the perfect topper for the oven pancake. And why not have a whole day dedicated to the theme or season that the full moon falls in as opposed to just ritual itself? For August, I'd say try this with blueberries.
So here's what you really want-the recipes:)
Grain Free Oven Pancake:
1/2 cup arrowroot flour
1/4 cup almond flour
2 tablespoons coconut flour
2 teaspoons of honey
4 eggs (preferably pastured)
a pinch of salt
a capful of vanilla extract
1/2 can (cans are usually 13.5 oz) of full fat coconut milk
Pre-heat your oven to 350 degrees. In the meantime, mix up the dry ingredients, and then add the wet ones to it, mixing thoroughly. Take a deep pan, and add 1 tablespoon of ghee, butter, or coconut oil to it, and then stick it in the oven for a couple of minutes, so it melts. Swirl it around after you take it out again, so the fat coats the bottom of the pan. Then add the batter and stick it all back in the oven for 15 minutes.
Strawberry Sauce
3/4 cup of strawberries, quartered
2 tablespoons of maple syrup
Put strawberries and maple syrup in a small sauce pan and mash the strawberries further while on low heat. Let simmer for 15 minutes.
How to serve:
We had it with some butter and yogurt on top, but if you are trying to keep it dairy free, try it with coconut yogurt or not at all.
And for some savory protein, have it with some bacon or sausage on the side. Enjoy!
